This Texas ice cream shop serving crawfish flavor with real seafood on top

A Texas ice cream shop is drawing attention for a seasonal flavor that blends dessert with seafood.

Every spring, during crawfish season, Red Circle Ice Cream offers a unique treat: crawfish ice cream. It’s made with butter and Cajun spices, and topped with a whole crawfish, which you can even use to eat it!

Nickey Ngo, the owner and creator of the shop, explained that the ice cream’s unique flavor comes from the Viet-Cajun crawfish style that’s popular in Houston. She makes the ice cream base with butter and crawfish boil seasoning, and then adds fresh crawfish to really bring out the flavor.

Things are absolutely crazy right now! As a gamer, I can tell you, demand is through the roof – we’re selling out constantly. We’re doing our best to keep everything running and available for as long as possible, but honestly, the phones haven’t stopped ringing! It’s a good problem to have, but definitely a hectic one.

Crawfish ice cream returns every spring as demand spikes

According to Ngo, the special ice cream flavor usually comes out around spring break, coinciding with when crawfish are bigger. They’ve been offering it for seven years, and it’s become very popular, often selling out quickly.

The dish starts with a flavorful base cooked in butter and spices. Then, crawfish are boiled right into that mixture. Finally, a single, fresh crawfish is placed on top as a garnish, making the dish look more appealing, according to Ngo.

As I’ve always maintained, people don’t want seafood mixed in with their ice cream,” she explained. Instead, customers are encouraged to use the crawfish as a utensil to enjoy the dessert.

Ngo suggests using parts of the crawfish – like the head or tail – as a spoon to scoop up and eat the crawfish itself.

The idea for the flavor dates back to 2019, when Ngo was at a family crawfish boil.

My sister, Mary, suggested I turn it into an ice cream flavor while we were sitting together, she said. Ngo explained that she developed the flavor in her test kitchen the very next day.

She explained that when creating new flavors, she prioritizes what customers will enjoy and how to get the community involved. The shop often experiments with unique pairings, such as durian, pandan, horchata, and even Hot Cheetos.

Ngo expressed amazement at the incredible support the community has shown, regardless of people’s opinions on whether or not they should face jail time.

Okay, so this isn’t even the weirdest food trend I’ve seen this year! Back in February, Great Wolf Lodge in Ohio dropped this milkshake… and it was topped with ranch dressing, carrots, and crispy chicken. Seriously! It blew up online, and now this new ice cream is doing the same thing. It’s been a strange year for food, that’s for sure.
