
Taco Bell and Salt & Straw, an ice cream company from Portland, are releasing a new treat called the “Tacolate” across the country beginning October 3.
Okay, so the Tacolate? It’s like if the Choco Taco had a seriously cool, adventurous cousin. Basically, they start with this amazing, hand-pressed waffle cone – it’s the shell! Then, they fill it with this incredible cinnamon ancho chili ice cream. And the best part? It’s all dipped in chocolate. Seriously, it’s so good!
As a final touch, customers will also receive two sauce packets inspired by Taco Bell. However, these aren’t your typical Taco Bell sauces like Fire or Diablo. Instead of being for burritos, the flavors – mango jalapeño and wildberry cinnamon – are created to perfectly complement the ice cream.
Salt & Straw initially experimented with the idea in 2016 at its Wiz Bang Bar location, offering a soft serve taco that quickly gained a dedicated following. A short-lived return in 2022 immediately sold out, which impressed Taco Bell CEO Sean Tresvant.

After years of development and testing, the Tacolate is finally available at Salt & Straw locations. Salt & Straw announced the collaboration on Instagram, calling it “the biggest engineering marvel in ice cream history.”

Beginning Friday, October 3rd, you’ll be able to find the Tacolate at every Salt & Straw location in the U.S. You can also order it online for delivery anywhere in the country. If you’re really excited, you can sign up for a waitlist now to make sure you don’t miss out when it’s released.
The Tacolate is the latest in a series of unusual ice cream partnerships happening in 2025. Back in September, Carnival Cruise Line and Van Leeuwen gained attention with an ice cream that tasted like sunscreen.
